The west side of the island of Ireland is shaped by strong ocean currents providing ideal conditions for smaller, organic farms to sustainably produce a small but exquisite selection of fresh salmon.  Salmon are matured for at least 3 years and are fed a natural marine and vegetal feed, free from GM products and chemical additives or preservatives.
