Our Irish Producers

We want to connect our customers with the wealth of amazing Irish ingredients on offer from our sea and our land, while also highlighting some quality produce from other countries also. Each day our culinary team prepare these products with great passion and care to enhance their natural flavours whether it’s the finest oysters from our coastal waters or fresh vegetables from our native soil.

We work with suppliers who carry the same ethos and quality in their production that we want to deliver to our customers. We take pride in growing a trusting relationship with our suppliers in order to guarantee the best and to follow through the sea-to-SOLE experience.

The map introduces a selection of the current Irish suppliers we are proud to work with. It is a celebration of the people and places behind the Irish ingredients and an opportunity to learn a little bit more about the island of Ireland and where some of the food at SOLE began its journey.

Producers beyond Ireland

At SOLE, we prioritise Irish produce wherever possible and value our relationships with Irish producers and suppliers.
Our long-standing sourcing policy recognises that availability varies by ingredient, season, and the quantities our restaurant requires. Our purchasing decisions therefore consider both provenance and our suppliers’ ability to provide a reliable, consistent supply.

Where we cannot secure Irish produce in the quantities and with the continuity of supply we require, we source internationally through our trusted Irish suppliers. The same standards of quality, provenance, traceability, and responsible sourcing apply, regardless of origin.

We are transparent about these choices and proud to recognise the producers who supply our restaurant, both in Ireland and beyond.
