Wild Sea Bass at SOLE

SOLE is featuring Wild Sea Bass with Caviar, available for a limited time at our Dublin Restaurant!

Dry aged in-house before filleting then pan-roasted and served with tomato & fennel foam, squid ink risotto and DaVinci Caviar.

Known as The King of the Sea and with good reason,
this beautiful fish is stunning to eat. Wild Bass are more lean with complex flavour profiles coming from their varied diet. Expect delicate flavours with deliciously firm yet flakey meat.

Ethically sourced through our partners Kish Fish, a family-run Irish seafood business founded in 1966 and gold medal winners at the 2023 Blas na hÉireann Awards.
